Hand-harvested from the cold, clean waters of Downeast Maine, these Waved Whelks (Buccinum undatum) are sustainably collected and frozen whole in the shell to preserve their fresh, ocean flavor. Whelk meat is firm, sweet, and briny — similar to conch or clam — and has long been a traditional delicacy along the North Atlantic coast.
Most commonly prepared pickled, whelks can also be steamed, sliced for chowders, or sautéed in butter and herbs for a rich, coastal dish. Each whelk is individually frozen and vacuum-sealed for freshness, ready to cook or pickle at home.
